We offer custom crush & fermentation services at our facility. We represent the full range of winemaking activities including crush, fermentation, all processing steps, barrel aging, storage, lab analysis and bottling. Services are offered under a standard one-year contract.
Our services are priced on a per-ton basis for the standard menu of processing steps exclusive of bottling, which is priced on a per-case basis.
The Fairwinds Estate Winery have space for new clients primarily for early reds, such as pinot noir, and/or lot sizes over 7 tons, and for barrel fermented white wines.

Open top, pneumatic punch down tanks (4.5-10 ton capacities)
Basket press (and bladder press)
Cave barrel storage (or cold room storage)
Bulldog racking (for whites or reds)

Chill and hold, or direct to barrel
Temp controlled barrel fermentation room
Warmer cave for finishing malolactic (or cold room to help stop it)

We can host AP clients. Larger sized tanks available as well (up to 22 tons). Special rates available for 16+-ton lot sizes any time with space for tank fermented whites. We have seasoned, flexible, well trained staff that can handle diverse wine operations.
